Co-fermented spontaneous fermentation. 60% whole cluster covered with pressed juice. Pressed at 2% remaining sugar. Transferred to neutral French oak puncheons (500L) and racked three times. Bottled unfiltered after 11 months. No modifications or additions. No SO2 addition.
